Cannellini cream
- Cooked cannellini beans, drained and rinsed very well1.2 kg
- Extra-virgin olive oil80 ml
- Agar agar3.2 g
- Cold water20 ml
- Fresh lemon juice12 ml
- Fine salt4 g, then adjust

Peach, almond & fig-leaf oil
- White peaches, ripe but still firm3–4 medium, according to size
- Peeled almonds40 g
- Fig-leaf oilabout 60 ml for service
Preparation
- Drain and rinse the cannellini extremely well to remove the preserving liquid. Blend with 40 ml of the olive oil until completely smooth.
- Whisk 3.2 g agar agar into 20 ml cold water. Bring to a full boil and cook for 1–2 minutes while stirring continuously.
- With the blender running, immediately incorporate the hot agar mixture into the cannellini cream.
- Add the remaining 40 ml olive oil, lemon juice, salt and optional white pepper. Blend again until glossy and homogeneous.
- Transfer to a wide, shallow container and refrigerate for at least 2 hours.
- Before service, check the texture. It must be compact enough to keep a central hollow open, but still soft enough to work cleanly with a spoon. If necessary, work it briefly with a spatula or blender.
- Toast the almonds until fragrant and pale golden. Cool completely, then break or chop them irregularly.
- Cut the white peaches close to service into clean wedges or slices. Keep the fruit fresh and firm.
- Place a generous spoonful of cannellini cream on each plate. Shape it with the spoon and create a distinct hollow in the centre.
- Spoon fig-leaf oil into the hollow. Arrange the white peach on or beside the cream and finish with toasted almonds.
Preparation, storage and service
Day before: prepare the cannellini cream and fig-leaf oil. Chill the cream in a wide shallow container.
Before service: toast the almonds and keep them completely dry in an airtight container. Cut the peaches as late as possible.
At the pass: plate cream and oil first; peach and almond go on close to service so freshness and crunch are preserved.
Allergens: almonds. The dish is plant-based if the fig-leaf oil contains only plant ingredients.

Crema di cannellini
- Cannellini cotti, scolati e sciacquati molto bene1,2 kg
- Olio extravergine d’oliva80 ml

- Sale fino4 g, poi regolare
- Pepe bianco0,8 g, facoltativo
Pesca, mandorla e olio di foglie di fico
- Pesche bianche mature ma ancora sode3–4 medie, secondo pezzatura
- Mandorle pelate40 g
- Olio di foglie di ficocirca 60 ml per il servizio
Preparazione
- Scola e sciacqua molto bene i cannellini per eliminare completamente il liquido di conservazione. Frullali con 40 ml di olio fino a ottenere una crema perfettamente liscia.
- Disperdi 3,2 g di agar agar nei 20 ml di acqua fredda. Porta a pieno bollore e cuoci per 1–2 minuti mescolando continuamente.
- Con il frullatore in funzione incorpora immediatamente la miscela calda di agar alla crema di cannellini.
- Aggiungi gli altri 40 ml di olio, il succo di limone, il sale e, se desiderato, il pepe bianco. Frulla ancora fino a ottenere una crema lucida e omogenea.
- Trasferisci in un contenitore largo e basso e lascia stabilizzare in frigorifero per almeno 2 ore.
- Prima del servizio controlla la consistenza. Deve essere abbastanza compatta da mantenere aperta una conca centrale, ma ancora lavorabile con il cucchiaio. Se necessario, lavorala brevemente con spatola o frullatore.
- Tosta le mandorle fino a profumo e leggera doratura. Falle raffreddare completamente e spezzale o tritale in modo irregolare.
- Taglia le pesche bianche il più vicino possibile al servizio in spicchi o fette pulite, mantenendo freschezza e struttura.
- Disponi su ogni piatto una cucchiaiata abbondante di crema di cannellini. Modellala con il cucchiaio e crea una conca centrale ben riconoscibile.
- Versa l’olio di foglie di fico nella conca. Disponi la pesca sulla crema o lateralmente e completa con le mandorle tostate.
Preparazione, conservazione e servizio
Il giorno prima: prepara la crema di cannellini e l’olio di foglie di fico. Conserva la crema in frigorifero in un contenitore largo e basso.
Prima del servizio: tosta le mandorle e conservale perfettamente asciutte in un contenitore ermetico. Taglia le pesche il più tardi possibile.
All’impiattamento: crema e olio possono essere disposti per primi; pesca e mandorle vanno aggiunte vicino al servizio per mantenere freschezza e croccantezza.
Allergeni: mandorle. Il piatto è vegetale se l’olio di foglie di fico contiene esclusivamente ingredienti vegetali.

Cannellini-Creme
- Gekochte Cannellini, sehr gut abgetropft und gespült1,2 kg
- Natives Olivenöl extra80 ml
- Agar Agar3,2 g
- Kaltes Wasser20 ml
- Frischer Zitronensaft12 ml
- Feines Salz4 g, dann abschmecken
- Weißer Pfeffer0,8 g, optional
Pfirsich, Mandel & Feigenblattöl
- Weiße Pfirsiche, reif aber noch fest3–4 mittelgroße, je nach Größe
- Geschälte Mandeln40 g
- Feigenblattölca. 60 ml für den Service
Zubereitung
- Cannellini sehr gut abtropfen und spülen, damit die Konservierungsflüssigkeit vollständig entfernt wird. Mit 40 ml Olivenöl völlig glatt mixen.
- 3,2 g Agar Agar in 20 ml kaltem Wasser verteilen. Vollständig aufkochen und 1–2 Minuten unter ständigem Rühren kochen.
- Die heiße Agar-Mischung bei laufendem Mixer sofort in die Cannellini-Creme einarbeiten.
- Die restlichen 40 ml Öl, Zitronensaft, Salz und optional weißen Pfeffer zugeben. Noch einmal glatt und glänzend mixen.
- In einen breiten, flachen Behälter füllen und mindestens 2 Stunden im Kühlschrank stabilisieren lassen.
- Vor dem Service die Konsistenz prüfen. Die Creme muss kompakt genug sein, um eine zentrale Mulde offen zu halten, aber noch sauber mit dem Löffel formbar bleiben.
- Mandeln duftend und hellgold rösten. Vollständig abkühlen lassen und unregelmäßig brechen oder hacken.
- Weiße Pfirsiche möglichst kurz vor dem Service in saubere Spalten oder Scheiben schneiden.
- Eine großzügige Menge Cannellini-Creme auf jeden Teller geben, mit dem Löffel formen und in der Mitte eine deutliche Mulde erzeugen.
- Feigenblattöl in die Mulde geben. Pfirsich auf oder neben der Creme anrichten und mit den gerösteten Mandeln abschließen.
Vorbereitung, Lagerung und Service
Am Vortag: Cannellini-Creme und Feigenblattöl vorbereiten. Die Creme in einem breiten, flachen Behälter gekühlt lagern.
Vor dem Service: Mandeln rösten und absolut trocken in einem luftdichten Behälter lagern. Pfirsiche möglichst spät schneiden.
Beim Anrichten: Creme und Öl zuerst; Pfirsich und Mandeln erst kurz vor dem Service hinzufügen, damit Frische und Knusprigkeit erhalten bleiben.
Allergene: Mandeln. Das Gericht ist pflanzlich, sofern das Feigenblattöl ausschließlich pflanzliche Zutaten enthält.
