Three dishes. Three cocktails. One spirit. A pairing project developed at Spirits Köln with tequila as the starting point for the culinary conversation.
Instead of creating a menu first and looking for drinks afterwards, FROM THE AGAVE explored food and cocktails as one connected project. Each pairing moved in a different direction while remaining part of the same idea.
A spirit can organise culinary development, not simply accompany it.
FROM THE AGAVE used tequila as a common point of departure. Food and cocktails were developed in dialogue, allowing each pairing to find its own character while keeping the overall experience coherent.
Pairing from the beginning, not at the end.
The project began with tequila and with a simple question: what happens when the spirit becomes part of the culinary thinking rather than something selected after the dish is finished?
From there, three different directions emerged: raw beef with mirabelle, roasted aromas around fig and goat cheese, and a greener, fresher register built around yellow melon.
I am interested in pairing when it changes the way I think about the dish, not when it simply confirms it.
Three dishes. Three cocktails. Three different culinary registers.
The project did not try to make three versions of the same pairing. Each direction had its own language, moving from raw and fruity to warmer roasted aromas and finally toward a fresher green register.
Three directions developed around one spirit.
Beef · mirabelle
A raw direction built around beef and mirabelle, bringing a seasonal fruit into a distinctly savoury register.
Fig · goat cheese
A warmer register centred on fig and goat cheese, developed around deeper toasted and roasted aromatic notes.
Yellow melon
A lighter and greener final direction, using yellow melon as the seasonal centre of the pairing.
Pairing became part of the development process itself.
Concept development
Defining tequila as the common starting point and creating three clearly different culinary directions.
Pairing development
Food and cocktails were considered together, rather than treating the drink as a final addition.
Production planning
The menu was structured around realistic preparation, transport and service conditions.
Service execution
Final textures, temperatures and aromatic elements were completed close to the moment of service.

The project was designed as a real working format, not simply as a visual concept.
Pairing becomes more interesting when it begins before the plate is finished.
FROM THE AGAVE reinforced the value of developing food and drink as parts of the same system. The objective was not to make the food taste like tequila, but to let the spirit influence direction, contrast and the overall architecture of the experience.
Tequila made explicit. The brand remained secondary.
The public communication presented the project as a journey through tequila and contemporary cooking. The focus remained on the relationship between the spirit, the three dishes and the three cocktails rather than on a commercial tequila brand.

Tre piatti. Tre cocktail. Un solo spirit. Un progetto di pairing sviluppato da Spirits Köln usando la tequila come punto di partenza della conversazione culinaria.
Invece di costruire prima il menu e cercare successivamente i drink, FROM THE AGAVE ha esplorato cucina e cocktail come un unico progetto. Ogni pairing prendeva una direzione differente, restando però parte della stessa idea.
Uno spirit può organizzare lo sviluppo culinario, non soltanto accompagnarlo.
FROM THE AGAVE ha utilizzato la tequila come punto di partenza comune. Cucina e cocktail sono stati pensati in dialogo, permettendo a ogni pairing di trovare un proprio carattere senza perdere la coerenza generale dell’esperienza.
Pensare il pairing dall’inizio, non alla fine.
Il progetto è partito dalla tequila e da una domanda semplice: cosa succede quando lo spirit entra nel pensiero culinario invece di essere scelto soltanto dopo aver terminato il piatto?
Da questa domanda sono nate tre direzioni: manzo crudo e mirabelle, note tostate intorno a fico e formaggio di capra, e un registro più verde e fresco costruito intorno al melone giallo.
Il pairing mi interessa quando cambia il modo in cui penso il piatto, non quando si limita semplicemente a confermarlo.
Tre piatti. Tre cocktail. Tre registri culinari differenti.
Il progetto non cercava tre variazioni dello stesso abbinamento. Ogni direzione aveva un proprio linguaggio: dal crudo e fruttato alle note più calde e tostate, fino a un registro finale più verde e fresco.
Tre direzioni sviluppate intorno a un unico spirit.
Manzo · mirabelle
Una direzione cruda costruita intorno a manzo e mirabelle, portando un frutto stagionale dentro un registro decisamente sapido.
Fico · formaggio di capra
Un registro più caldo costruito intorno a fico e formaggio di capra, sviluppato attraverso note aromatiche tostate.
Melone giallo
Una direzione finale più leggera e verde, con il melone giallo come centro stagionale del pairing.
Il pairing è diventato parte dello stesso processo di sviluppo.

Definire la tequila come punto di partenza comune e costruire tre direzioni culinarie chiaramente differenti.

Cucina e cocktail sono stati pensati insieme, invece di trattare il drink come aggiunta finale.

Il progetto è stato costruito come un formato realmente operativo, non soltanto come concept visivo.
Il pairing diventa più interessante quando comincia prima che il piatto sia finito.
FROM THE AGAVE ha confermato il valore di sviluppare cucina e drink come parti dello stesso sistema. L’obiettivo non era far sapere i piatti di tequila, ma permettere allo spirit di influenzare direzione, contrasti e architettura generale dell’esperienza.
La tequila era esplicita. Il marchio rimaneva secondario.
La comunicazione pubblica presentava il progetto come un percorso attraverso tequila e cucina contemporanea. Il centro rimaneva la relazione tra lo spirit, i tre piatti e i tre cocktail, non un marchio commerciale di tequila.

Drei Gerichte. Drei Cocktails. Ein Spirit. Ein Pairing-Projekt bei Spirits Köln, bei dem Tequila zum Ausgangspunkt der kulinarischen Entwicklung wurde.
Statt zuerst ein Menü zu entwickeln und danach passende Drinks zu suchen, verstand FROM THE AGAVE Food und Cocktails als ein gemeinsames Projekt. Jedes Pairing entwickelte eine eigene Richtung und blieb dennoch Teil derselben Idee.
Ein Spirit kann kulinarische Entwicklung strukturieren, nicht nur begleiten.
FROM THE AGAVE nutzte Tequila als gemeinsamen Ausgangspunkt. Food und Cocktails wurden im Dialog entwickelt, sodass jedes Pairing einen eigenen Charakter finden konnte, ohne die Kohärenz des gesamten Erlebnisses zu verlieren.
Pairing von Anfang an denken, nicht erst am Ende.
Das Projekt begann mit Tequila und einer einfachen Frage: Was passiert, wenn der Spirit Teil des kulinarischen Denkens wird, anstatt erst nach Fertigstellung des Gerichts ausgewählt zu werden?
Daraus entstanden drei unterschiedliche Richtungen: rohes Rind mit Mirabelle, Röstaromen rund um Feige und Ziegenkäse und ein grüneres, frischeres Register rund um gelbe Melone.
Pairing interessiert mich dann, wenn es verändert, wie ich über ein Gericht nachdenke — nicht wenn es das Gericht lediglich bestätigt.

Das Projekt suchte nicht nach drei Variationen desselben Pairings. Jede Richtung hatte eine eigene Sprache: von roh und fruchtig über wärmere Röstaromen bis zu einem frischeren, grünen Abschluss.
Drei Richtungen rund um einen Spirit.
Rind · Mirabelle
Eine rohe Richtung rund um Rind und Mirabelle, bei der saisonale Frucht in ein deutlich herzhaftes Register eintritt.
Feige · Ziegenkäse
Ein wärmeres Register rund um Feige und Ziegenkäse, entwickelt über tiefere geröstete und warme Aromen.
Gelbe Melone
Eine leichtere und grünere Schlussrichtung mit gelber Melone als saisonalem Mittelpunkt des Pairings.
Pairing wurde Teil des eigentlichen Entwicklungsprozesses.
Konzeptentwicklung
Tequila als gemeinsamen Ausgangspunkt definieren und drei klar unterschiedliche kulinarische Richtungen entwickeln.
Pairing-Entwicklung
Food und Cocktails wurden gemeinsam gedacht, statt den Drink erst am Ende hinzuzufügen.
Produktionsplanung
Das Menü wurde unter realistischen Bedingungen für Vorbereitung, Transport und Service entwickelt.
Service
Finale Texturen, Temperaturen und aromatische Elemente wurden möglichst nah am Serviermoment fertiggestellt.

Das Projekt wurde als reales Arbeitsformat entwickelt, nicht nur als visuelles Konzept.
Pairing wird interessanter, wenn es beginnt, bevor das Gericht fertig ist.
FROM THE AGAVE bestätigte den Wert, Food und Drinks als Teile desselben Systems zu entwickeln. Das Ziel war nicht, dass die Gerichte nach Tequila schmecken, sondern dem Spirit zu erlauben, Richtung, Kontraste und die Architektur des gesamten Erlebnisses mitzubestimmen.
Tequila war klar sichtbar. Die Marke blieb im Hintergrund.
Die öffentliche Kommunikation präsentierte das Projekt als Entdeckungsreise durch Tequila und zeitgenössische Küche. Im Mittelpunkt stand die Beziehung zwischen dem Spirit, den drei Gerichten und den drei Cocktails — nicht eine kommerzielle Tequila-Marke.
Spirits Köln
FROM THE AGAVE fand am 25. August 2026 bei Spirits Köln statt. Food von Andrea Sposini und Cocktails von Spirits Köln wurden als zwei miteinander verbundene Teile desselben Pairing-Projekts entwickelt.
