Nota sulla versione originale. Nel testo storico Andrea annotava di far spurgare le lumache con quattro giorni di digiuno in rete, coperte da un panno umido. Per riprodurre oggi la ricetta in modo pratico, è preferibile partire da lumache destinate al consumo alimentare e già correttamente spurgate, oppure seguire le indicazioni del proprio fornitore.
Procedimento

Preparazione

  1. Lava accuratamente le lumache già spurgate.
  2. Metti le lumache in abbondante acqua salata con cipolla, sedano, una foglia di alloro e 2 spicchi d’aglio. Portale a cottura, quindi scolale e tienile da parte.
  3. In un tegame basso, preferibilmente di coccio, versa l’olio extravergine d’oliva. Aggiungi il restante spicchio d’aglio, parte del prezzemolo e il peperoncino, tutto tritato finemente.
  4. Quando il fondo comincia appena a prendere colore, aggiungi le lumache già bollite e falle insaporire per qualche istante.
  5. Sfuma con un bicchiere di vino bianco secco e lascia evaporare completamente l’alcol.
  6. Aggiungi i pomodori pelati, schiacciandoli leggermente. Copri e lascia cuocere dolcemente per circa 30 minuti.
  7. Taglia le patate in pezzi regolari e aggiungile al tegame.
  8. Versa acqua tiepida fino quasi a coprire il contenuto. Regola di sale e prosegui la cottura per circa 15 minuti, o fino a quando le patate saranno cotte ma ancora compatte.
  9. Controlla sapidità e consistenza del fondo. Il piatto deve risultare umido e legato, non acquoso.
  10. Completa con prezzemolo fresco tritato e servi caldo.
Punto di cottura. La ricetta è pronta quando le patate sono morbide ma non sfatte e il fondo di pomodoro, vino e olio si è legato alle lumache.

Note on the original version. Andrea’s historical text described purging the snails by keeping them in a net for four days under a damp cloth. For a practical modern preparation, use snails intended for food and already correctly purged, or follow the instructions supplied by your food supplier.
Method

Preparation

  1. Wash the already purged snails thoroughly.
  2. Place them in plenty of salted water with onion, celery, bay leaf and 2 cloves of garlic. Cook, then drain and reserve.
  3. In a low pan — traditionally earthenware — heat the extra-virgin olive oil with the remaining garlic clove, part of the parsley and the chilli, all finely chopped.
  4. As soon as the aromatic base begins to colour lightly, add the cooked snails and sauté briefly.
  5. Deglaze with a glass of dry white wine and let the alcohol evaporate completely.
  6. Add the peeled tomatoes, crushing them lightly. Cover and cook gently for about 30 minutes.
  7. Cut the potatoes into even pieces and add them to the pan.
  8. Add warm water until the contents are almost covered. Season with salt and cook for about 15 minutes, or until the potatoes are cooked but still hold their shape.
  9. Check seasoning and the consistency of the sauce. It should be moist and bound, not watery.
  10. Finish with freshly chopped parsley and serve hot.
Doneness. The dish is ready when the potatoes are tender but intact and the tomato, wine and olive-oil base has become cohesive around the snails.

Hinweis zur ursprünglichen Version. Im historischen Text beschrieb Andrea, die Schnecken vier Tage in einem Netz unter einem feuchten Tuch fasten zu lassen. Für eine praktische heutige Zubereitung sollten Schnecken verwendet werden, die ausdrücklich für den Lebensmittelverzehr bestimmt und bereits korrekt gereinigt bzw. entschleimt sind, oder es sollten die Hinweise des Lieferanten befolgt werden.
Methode

Zubereitung

  1. Die bereits vorbereiteten Schnecken gründlich waschen.
  2. In reichlich Salzwasser mit Zwiebel, Sellerie, Lorbeer und 2 Knoblauchzehen garen. Anschließend abgießen und beiseitestellen.
  3. In einem flachen Topf — traditionell aus Ton — Olivenöl mit der restlichen Knoblauchzehe, einem Teil der Petersilie und Chili erhitzen; alles fein gehackt.
  4. Sobald der Ansatz leicht Farbe annimmt, die vorgegarten Schnecken zugeben und kurz anbraten.
  5. Mit einem Glas trockenem Weißwein ablöschen und den Alkohol vollständig verdampfen lassen.
  6. Geschälte Tomaten zugeben und leicht zerdrücken. Abdecken und etwa 30 Minuten sanft garen.
  7. Kartoffeln in gleichmäßige Stücke schneiden und in den Topf geben.
  8. Warmes Wasser zugeben, bis der Inhalt fast bedeckt ist. Salzen und etwa 15 Minuten weitergaren, bis die Kartoffeln weich, aber noch kompakt sind.
  9. Abschmecken und die Konsistenz prüfen. Der Sud soll gebunden und saftig, aber nicht wässrig sein.
  10. Mit frisch gehackter Petersilie abschließen und heiß servieren.
Garpunkt. Fertig ist das Gericht, wenn die Kartoffeln weich, aber intakt sind und sich Tomate, Wein und Olivenöl um die Schnecken zu einem gebundenen Fond verbunden haben.
